Team Bio

The Beverly Pigbillies BBQ team was started in 1998 by a group of employees of AIMS Logistics in Collierville TN. At the time AIMS Logistics had about 35 employees. Co-founders Dave and Ned Nelson started the company in 1994 and were looking for a way to entertain employees and clients. We found an old smokehouse on a trailer and decided to rebuild it so we could cook for company picnics and meetings. We competed in some regional BBQ contests our first year and did pretty well, winning Grand Champion in the Brownsville TN. Our first year competing in Memphis in May™ was 1999. Since that time AIMS Logistics has grown to over 300 employees in the US and over 80 employees in Europe, India and Australia.

Memphis in May™ has become a huge event for the company. Client and employees come in from all over country and Europe. This year we entertained over 400 people during the three-day event. Through it all we have continued to refine our BBQ recipes and techniques. Below is our recipe for pork shoulder.
